30 Day Clean Eating Challenge-Honey Garlic Salmon
You talk about absolutely delicious and so incredibly fast and easy… this wonderful Honey Garlic Salmon is it! Do you have a little butter? garlic? honey? soy sauce? lemons? Well that is all you need to make a quick and yummy sauce for this salmon and I ccoked it in a cast iron skillet! Now, you can use another kind of skillet, but like I have told you before…. just go buy you a cast iron skillet if you don’t have one! This cooks literally in a few minutes on the stove then transfers to the oven for a few more minutes and that is that! You don’t even have to flip them!
You are going to love this and you are going to please all your family members, even the picky ones!
Here’s all you need: (4 servings)
4 salmon fillets (wild caught) and about 1/2 pound each or so, skin on or off
salt, pepper, and about 1/2 t paprika to season
2 T butter
4 cloves garlic, minced
4 T honey
1 T water
2 t lower sodium soy sauce
1 T fresh squeezed lemon juice
lemon wedges to serve
Preheat the oven to 450. Season the salmon with salt, pepper, and paprika. Mix the honey, water, soy sauce, and lemon juice in a bowl. Melt the butter in a large skillet over medium-high heat. Saute the garlic for a minute. Add the honey mixture and stir for a minute to combine the flavors. Carefully put the salmon fillets in skin side down, if there is skin on it. Cook for about 4 minutes, basting the salmon constantly. The sauce will get darker and thicker as it cooks. Baste one last time and transfer the skillet to the oven. If you aren’t using an oven-proof skillet, transfer the fish to a baking sheet. Bake at 450 for about 4 more minutes or until your salmon flakes easily and cooked to your taste. Serve with the lemon wedges. Voila! A fancy, but so easy dinner!
