30 Day Clean Eating Challenge – Low Carb Chicken Cordon Bleu Casserole
Oh man! This was scrumptious! This is a low carb version of Chicken Cordon Bleu in a casserole form! I sprinkled about a teaspoon or two of bread crumbs on top to make a little crust, but that is optional! I used a rotisserie chicken from the store as well, so this was really quick to make. We loved it!
Here’s what you need:
One cooked rotisserie chicken, meat shredded. OR you can use about 4-5 cups of shredded cooked chicken
1 1/2 cups ham, chopped into bite-sized pieces
2 T butter, softened
6 oz. light cream cheese, softened
1 T Dijon mustard
Juice of one lemon
1/2 t salt
1/4 t black pepper
5 oz swiss cheese (about 4-5 slices)
1-2 t bread crumbs (optional)
Preheat the oven to 350. Put the shredded chicken in the bottom of a 9×13 baking dish. Layer the pieces of ham on top of that. In the food processor, or in a mixing bowl with a mixer, blend the cream cheese, butter, lemon juice, mustard, salt and pepper together until it is smooth. Spread this sauce evenly over the ham and chicken. Lay the pieces of swiss cheese on top of the sauce. Bake uncovered for 30 minutes. Sprinkle on the bread crumbs if you are using them, and set the oven to broil. Broil for 2 minutes to brown the top. (Be careful not to let it burn!) YUMMY!
