30 Day Clean Eating Challenge – Mexican Lasagna
My son Chase asked me, “Mom is Mexican Lasagna a thing?”. I was like,”Well, let me get into the kitchen and we will find out!” I am happy to announce that YES it is a thing! I made this easy layered Mexican “Lasagna” and it is the BOMB! It is so good and perfect for a quick one dish meal for game night! You can whip this up too!
Here’s What You need:
1 package whole wheat tortillas
2 lbs lean ground beef or ground turkey
1 large jar salsa of your choice
1/2 cup sour cream
8-10 oz. cheddar cheese, shredded
1 can refried beans
2 pouches low sodium taco seasoning
About 2 oz Queso Fresco cheese
Shredded lettuce, chopped tomatoes, cilantro, and sliced jalapenos for garnish
Preheat oven to 375. Brown the ground beef or turkey, drain fat and add the taco seasoning. Spray a 9×13 casserole dish with cooking spray, Spread about 1/4 cup of the salsa on the bottom of the dish. Put one layer of the tortillas to cover the bottom. Spread half of the refried beans on the tortillas. Next, add a thick layer of the taco meat. Next spread a layer of salsa. Next sprinkle with cheddar cheese. Put small dollops of sour cream evenly on the cheddar. Top with another layer of tortillas and repeat. Top with one last layer of tortillas and spread a small amount of salsa, and cheddar. Cover with foil and bake for 30 minutes. Uncover and add the Queso Fresco cheese. Bake uncovered for about 15 minutes more. Allow to rest before serving. Top with your choice of garnishes. YUM!
