If you love the taste of breaded, fried fish but are cutting back on fried food, this Parmesan Crusted Tilapia is a great dish for you to try! It is quick and easy, full of flavor, and healthy! If is lightly dusted with a mixture of Italian bread crumbs and grated Parmesan and is quickly baked in the oven. It turns out perfect every time, without the fat, calories, and mess of frying fish! A good thing to remember is that if you eat two servings of fish per week, it lowers your risk of heart disease….so another reason to enjoy fish!

Here’s what you need:
4-6 tilapia fillets
About 1 cup of Italian bread crumbs
1/2 cup grated Parmesan cheese
1 egg beaten
salt and pepper to taste
cooking spray
Preheat oven to 425. Spray a baking sheet with cooking spray. Place beaten egg in a bowl. Put the bread crumbs mixed with the parmesan cheese, salt and pepper in another shallow bowl or on a plate. Dip each filet in the egg and then coat each with the crumb mixture on both sides. Place each filet on the baking sheet. Bake at 425 about 6 minutes or until it flakes easily. Turn oven to broil and broil for about 1 minute or until the crumbs start to brown. Quick, easy and delicious!
