30 Day Clean Eating Challenge
I am growing kale in my spring garden and wow, am I enjoying it! It is tender and mild and delicious raw as well as cooked. I whipped up this bright and fresh salad with the kale, berries, apple and blue cheese. For a shortcut, I used poppy seed dressing that I got from the grocery in the produce section. Kale is so good for us! It is a great source of fiber, antioxidants, calcium, Vitamins K and C, and iron! So eat up, and enjoy!
Here’s what you need:
- 4 cups kale, chopped
- 1 cup blueberries
- 1 cup strawberries
- 2 Granny Smith apples diced
- 1/2 cup blue cheese crumbled
- 1/4 to 1/3 cup Poppyseed dressing ( or to your taste)
Mix all the ingredients. Allow to sit for a little while before serving. Enjoy!
