Weekly Soups to Warm Your Fall

Fall is here and it is officially soup season! What better way to warm up on a cool autumn day than with a deliciously hearty bowl of soup! The recipes I am sharing with you today are not only some of my family’s favorites, they are healthy and simple to make! 

Soups are not only comforting but can be easier on your budget than other meals. I love making soups and stews because we usually have leftovers perfect for lunches that week. It’s easy to double these recipes if you would like! Who doesn’t love saving money and time?

My taco soup recipe I am sharing is made in the instant pot for a super fast weeknight meal, however this recipe can easily be made on the stovetop! I love this one because it is so kid friendly! Now, let me talk about the stuffed pepper soup!  Think deconstructed stuffed peppers and you can only imagine the hearty goodness of this one!  If you really want fast and simple, try my chicken tortilla soup made with a rotisserie chicken from the grocery! You can’t beat that for simplicity! It is always a family favorite!  If you are wanting something extra thick and hearty, go for my beef and cabbage stew! This will warm you up and let me tell you, it’s hard to stop at one bowl! If you are a butternut squash fan, you have to try my butternut squash soup! This soup just screams fall! I use a few potatoes in this recipe to give it more body and substance. It is creamy and so delicious!
