Wholesome Butternut Squash Soup
Comfort soup at it’s best for a quiet night with family
Simple, wholesome, comforting, and delicious! Those are some of the words I use to describe this wonderful bowl of my butternut squash! I love butternut squash and I grow it in my garden most years. It has a similar taste to sweet potato, only milder. It is full of Vitamin A and C and just so delicious! I love to dice it and saute it, mash it like mashed potatoes and I love it made into this creamy soup!
Here’s all you need:
1 butternut squash, peeled and diced
2 red potatoes, peeled and diced
1 onion, diced
32 oz. chicken broth
1/2 cup half and half
2 T butter
salt and pepper to taste
optional: Whipped heavy cream to garnish
Saute all the veggies in the butter in a large pot until they are softened. Pour in the chicken broth. Simmer until the veggies are very soft. Blend it all in the food processor or blender. This will probably take two batches. Pour it all back into the pot. Turn off heat, and pour in the half and half. Salt and pepper to taste. You may garnish with a little heavy cream that has been whipped if you want. This is a wonderfully comforting fall treat! Enjoy!
